Do hrnca vložíme šunku spolu s bobkovými listami a novým korením, vodou, nesolíme však ak máme údenú šunku a varíme 1,5 hodiny.
Do ďalšieho hrnca si dáme variť zemiaky v šupke, vodu osolíme. Zemiaky po uvarení a miernom vychladnutí ošúpeme a nastrúhame nahrubo.
Po uplynutí 1,5 hodiny, alebo keď teplota šunky v jadre presiahne 77 °C, šunku vyberieme, necháme odležať 10 až 15 minút a krájame na požadovanú hrúbku.
V hrnci rozpustíme maslo, za stáleho miešania pidáme smotanu. Ochutíme soľou a čerstvo namletým čiernym korením.
Omáčku po zovretí odstavíme a pridáme nasekanú petržlenovú vňať. Pred servírovaním si orestujeme cibuľu nakrájanú na kocky spolu so zemiakmi a podávame.
TIP: Pokojne skúste uvariť šunku v jablokovom džúse alebo v jablkovom Cideri.
